Description
A comforting side dish featuring fluffy long-grain rice with the richness of butter and the sweetness of caramelized onions.
Ingredients
Scale
- 1 cup long-grain rice
- 2 tablespoons butter
- 1 large onion, thinly sliced
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Prep your ingredients by washing the rice under cold water until clear and slicing the onion thinly.
- Sauté the onions in a medium-sized pot with melted butter over medium heat, seasoning with a pinch of salt until caramelized, about 10-15 minutes.
- Add the rinsed rice to the pot, stirring to coat the grains in the butter.
- Pour in the broth and stir to combine, adding salt and pepper to taste.
- Bring the mixture to a gentle boil, then reduce the heat to low, covering the pot, and simmer for 15-20 minutes until the rice has absorbed all the liquid.
- Fluff the rice with a fork after letting it sit covered for 5 minutes, and garnish with parsley.
