- 1 lb ground beef
- 2 cups rotini pasta, cooked and drained
- 1 cup sweet corn kernels
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1 cup milk
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the rotini pasta according to package instructions until al dente, then drain and set aside.
- Brown the ground beef in a skillet with olive oil, breaking it apart and cooking for about 5-7 minutes.
- Season the browned beef with ranch seasoning, garlic powder, onion powder, salt, and pepper, and cook for another minute.
- Mix cream cheese, sour cream, and milk in a bowl until smooth.
- Combine the beef mixture, cooked rotini, sweet corn, and creamy mixture in the skillet.
- Add ¾ of the cheddar cheese and mix well.
- Transfer the mixture to a greased 9×13 inch baking dish and spread it evenly.
- Top with the remaining cheddar cheese.
- Bake for 30-35 minutes until hot and bubbly.
- Garnish with chopped parsley and let it rest for 5 minutes before serving.
Notes
This dish can be prepared ahead of time and refrigerated. Add 10-15 minutes to baking time if baking from cold.
