Ingredients

  • 1 pound ground beef
  • 8 ounces sliced mushrooms (cremini or button)
  • 1 diced onion
  • 3 cloves minced garlic
  • 2 tablespoons olive oil
  • Chopped seasonal vegetables (like spinach or zucchini)
  • Fresh thyme or parsley (or dried herbs)
  • Salt and black pepper to taste
  • 1 cup beef broth or heavy cream
  • 12 ounces pasta (like fettuccine or spaghetti)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until they’re soft and fragrant.
  2. Add 1 pound of ground beef to the pan. Break it up with a wooden spoon and cook until it’s nicely browned and cooked through, about 5-7 minutes.
  3. Stir in 8 ounces of sliced mushrooms and continue cooking for another 3-5 minutes until they’re tender.
  4. Toss in your chopped seasonal vegetables and cook until they’re just wilted, about 2 minutes.
  5. Season the mixture generously with salt, black pepper, and your choice of herbs. Pour in 1 cup of broth or a splash of cream, stirring to combine. Let it simmer for about 5 minutes to meld the flavors.
  6. Cook 12 ounces of pasta according to package instructions until al dente. Drain and reserve a cup of pasta water.
  7. Add the drained pasta to the skillet with the beef and mushroom mixture. Toss everything together, adding reserved pasta water a little at a time if the sauce is too thick. Keep stirring until everything is combined and heated through—about 2 minutes.

Notes

For serving, top with fresh parsley and grated Parmesan cheese; a drizzle of olive oil enhances the dish.
