- 2 medium zucchinis, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon paprika

Instructions
- Marinate the Chicken: Start by combining the minced garlic, lemon juice, lemon zest, paprika, olive oil, salt, and pepper in a bowl. Add the chicken and mix well, ensuring every piece is coated. Let it marinate for at least 15 minutes, or refrigerate for a couple of hours for more flavor.
- Preheat Your Pan: While the chicken is marinating, heat a large skillet over medium-high heat. If you have a cast-iron skillet, now’s the time to use it.
- Cook the Chicken: Once your skillet is hot, place the marinated chicken in it. Cook thighs for 6-8 minutes on each side or until internal temperature reaches 165°F. Breasts may cook faster, so keep an eye on them!
- Sauté the Zucchini: Remove the chicken and add the sliced zucchinis to the skillet. Add a drizzle of olive oil if needed, and sauté over medium heat for about 3-5 minutes, until tender but slightly crisp.
- Plate the Dish: Serve with zucchini on each plate topped with chicken. Drizzle remaining juices over the top and garnish with fresh herbs.
Notes
For extra flavor, consider marinating the chicken longer. Serve on a colorful platter with crusty bread or a side salad.
