Ingredients

  • 4 pieces Bone-in, skin-on chicken (thighs, breasts, or drumsticks)
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 2 Carrots, cut into bite-sized pieces
  • 2 Celery stalks, cut into bite-sized pieces
  • 1 teaspoon Thyme (fresh or dried)
  • 1 teaspoon Rosemary (fresh or dried)
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup Apple cider
  • 12 cups Chicken broth or Cream (as needed)

Instructions

  1. Prepare your ingredients: Gather all your ingredients, chop your onion and garlic, and cut the carrots and celery into bite-sized pieces.
  2. Sear the chicken: Heat a large pot over medium-high heat and add olive oil. Season the chicken with salt and pepper and sear skin-side down for 5-7 minutes until golden brown. Flip and sear for another 5 minutes. Remove and set aside.
  3. Sauté the aromatics: In the same pot, add onion, garlic, and salt, and sauté for 3 minutes until onions are translucent.
  4. Add the vegetables: Toss in the carrots and celery, sautéing for 5 minutes until they soften.
  5. Deglaze with apple cider: Pour in the apple cider and scrape up any browned bits from the bottom. Simmer for 2-3 minutes.
  6. Return the chicken and herbs: Nestle the chicken back into the pot, sprinkle with thyme and rosemary.
  7. Add broth (if using): Pour enough chicken broth to cover halfway up the chicken. You can also add cream now if desired.
  8. Braise the chicken: Bring to a gentle simmer, cover, and let it braise for 30-40 minutes on low heat.
  9. Finish cooking: Let it sit for 5-10 minutes before serving to meld the flavors.
  10. Serve and enjoy: Taste the sauce and adjust seasoning if needed. Serve over rice, mashed potatoes, or with crusty bread.

Notes

Substitute vegetables and experiment with flavors; add BBQ sauce for a twist!
