Ingredients
Scale
- 1 lb sirloin or flank steak, thinly sliced against the grain
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp vegetable oil
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp toasted sesame oil
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 12 oz fresh lo mein egg noodles
- 2 cups shredded cabbage
- 1 cup sliced carrots
- 1 cup snap peas
- 3 stalks green onions, cut into 2-inch pieces
- 2 tbsp canola or grapeseed oil
Instructions
- Marinate the beef: In a medium bowl, toss the thinly sliced beef with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch until well coated. Set aside for about 15-20 minutes.
- Cook the noodles: Bring a large pot of water to a rolling boil. Add the fresh lo mein noodles and cook according to package instructions (around 3-5 minutes), then drain and rinse under cold water.
- Stir-fry the beef: In a large wok, heat up 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef and let it sit for about a minute before tossing. Cook for an additional 2-3 minutes until browned, then remove from the pan.
- Sauté the aromatics: In the same pan, add the remaining tablespoon of vegetable oil and toss in minced garlic and grated ginger. Sizzle for about 30 seconds.
- Add the vegetables: Toss in the shredded cabbage, sliced carrots, and snap peas. Stir-fry for about 3-5 minutes.
- Combine all together: Return the beef to the pan, add the cooked lo mein noodles, soy sauce, oyster sauce, brown sugar, and toasted sesame oil. Toss together and stir-fry for another 2-3 minutes.
- Finish with green onions: Fold in the green onions just before serving.
