- 1 cup fresh strawberries, chopped
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/4 cup butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prep your muffin tin with paper liners or grease it lightly.
- Mix the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, followed by the vanilla extract.
- Combine the flour, baking powder, baking soda, and salt in another bowl.
- Combine the dry mixture with the wet mixture, stirring gently until just combined.
- Fold in the chopped strawberries.
- Fill the muffin tin, each cup about 3/4 full.
- Bake for about 20-25 minutes or until golden brown.
- Cool in the pan for a few minutes before transferring to a wire rack.
Notes
Enjoy with a dollop of whipped cream or a sprinkle of powdered sugar. Freezing leftover muffins is a great option.
