Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your muffin tin with paper liners or grease it lightly.
  3. Mix the cream cheese and sugar together until smooth and creamy.
  4. Add the eggs one at a time, followed by the vanilla extract.
  5. Combine the flour, baking powder, baking soda, and salt in another bowl.
  6. Combine the dry mixture with the wet mixture, stirring gently until just combined.
  7. Fold in the chopped strawberries.
  8. Fill the muffin tin, each cup about 3/4 full.
  9. Bake for about 20-25 minutes or until golden brown.
  10. Cool in the pan for a few minutes before transferring to a wire rack.
