Description

Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Scoop rounded tablespoons of batter onto the prepared baking sheets.
  6. Bake for 10-12 minutes until the edges are set and a toothpick comes out clean.
  7. Cool the whoopie pies on baking sheets for about 5 minutes before transferring to a wire rack.
  8. Beat together cream cheese, powdered sugar, and maple syrup until smooth for the filling.
  9. Spread the cream cheese filling on the flat side of one pie and top with another pie.

Notes

Serve with warm spiced chai or coffee for a cozy experience. You can also freeze the whoopie pies and make the frosting ahead of time.
