Ingredients

  • 1/2 cup powdered sugar
  • 1/4 cup brown sugar for topping
  • 1 teaspoon cinnamon for topping
  • 1 tablespoon butter for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them lightly.
  2. Mix your dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In another bowl, mix the pumpkin puree, vegetable oil, sugars, eggs, and vanilla extract until well combined.
  4. Bring it all together: Carefully fold the dry ingredients into the wet mixture with a spatula until just combined.
  5. Prepare the cream cheese filling: Blend softened cream cheese and powdered sugar until smooth.
  6. Fill the muffin tin: Spoon about a tablespoon of muffin batter into each muffin cup, add a dollop of cream cheese filling, and top with another tablespoon of batter.
  7. Mix the topping: Combine brown sugar and cinnamon in a small bowl, and sprinkle on top of each muffin.
  8. Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean. Let them cool in the pan for about 5 minutes before transferring to a wire rack.
