Instructions

  1. Prep the strawberries: Start by washing and hulking your strawberries, then chop them into small chunks. Save a few whole strawberries for decoration later!
  2. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray.
  3. Cream the butter and sugar: In a mixing bowl, cream the softened butter and sugar until light and fluffy—about 3-4 minutes.
  4. Add the eggs: Beat in the eggs one at a time, ensuring each is well incorporated. Add the vanilla extract.
  5. Combine the dry ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Mix it all together: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Fold in the chopped strawberries gently.
  7. Bake: Pour the batter into the loaf pan and bake in the preheated oven for 60-70 minutes or until a toothpick inserted comes out clean.
