Description

Indulge in the warm, nutty flavor of brown butter combined with fresh apples in these delightful blondies, topped with a sweet cinnamon glaze.

Ingredients

Scale
  • 1 cup (225g) unsalted butter
  • 1 cup (200g) granulated sugar
  • ½ cup packed (110g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 medium apples (about 300g), peeled and diced
  • 1 teaspoon cinnamon
  • For the Cinnamon Glaze:
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons (30-45ml) whole milk
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

Instructions

  1. Brown the butter: Start by melting your butter over medium heat in a saucepan. Stir occasionally until it foams and turns golden brown.
  2. Mix sugars: In a large mixing bowl, combine the granulated sugar and brown sugar. Pour in the browned butter and whisk together until smooth.
  3. Add eggs and vanilla: Crack in the eggs, one at a time, and add your vanilla extract. Whisk until creamy and combined.
  4. Combine dry ingredients: In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually fold into the butter-sugar-egg mixture.
  5. Fold in apples: Gently fold in the diced apples until evenly distributed.
  6. Bake: Pour the batter into a greased 9×13-inch baking dish and spread evenly. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes.
  7. Cool down: Allow the blondies to cool in the pan for about 15-20 minutes before transferring to a wire rack.
  8. Whip up the cinnamon glaze: In a small bowl, mix the sifted powdered sugar and ground cinnamon, then gradually stir in milk until the desired consistency is reached.
  9. Glaze it up: Drizzle the cinnamon glaze over the cooled blondies.
  10. Slice and serve: Cut into squares or rectangles and enjoy!

Notes

To reduce sweetness, consider adjusting the sugar amounts. For a vegan version, substitute butter with coconut oil and use flax eggs.
