Ingredients

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup reduced fresh apple cider
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the crushed graham crackers and melted butter in a medium bowl.
  3. Grease a 9-inch springform pan and press the crust mixture into the bottom.
  4. Bake the crust for about 10 minutes until lightly golden.
  5. Beat the cream cheese with granulated and brown sugars until smooth.
  6. Add the eggs one at a time, mixing well.
  7. Stir in the vanilla extract.
  8. Pour in the apple cider and mix until just combined.
  9. Sift together the flour and salt, then fold into the batter.
  10. Bake the cheesecake for 50-60 minutes until the edges are set.
  11. Cool in the oven for an hour, then refrigerate for at least 4 hours.

Notes

For serving, garnish with cinnamon or caramel sauce, and enjoy with fresh cream.
