- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 4 (8 ounce) packages cream cheese, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup reduced fresh apple cider
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the crushed graham crackers and melted butter in a medium bowl.
- Grease a 9-inch springform pan and press the crust mixture into the bottom.
- Bake the crust for about 10 minutes until lightly golden.
- Beat the cream cheese with granulated and brown sugars until smooth.
- Add the eggs one at a time, mixing well.
- Stir in the vanilla extract.
- Pour in the apple cider and mix until just combined.
- Sift together the flour and salt, then fold into the batter.
- Bake the cheesecake for 50-60 minutes until the edges are set.
- Cool in the oven for an hour, then refrigerate for at least 4 hours.
Notes
For serving, garnish with cinnamon or caramel sauce, and enjoy with fresh cream.
