Chocolate Strawberry Yogurt Clusters

Description

A delightful combination of creamy yogurt, fresh berries, and rich chocolate, perfect for a healthy snack or dessert.


Ingredients

  • 1½ cups chopped strawberries and/or raspberries
  • 1 cup plain low-fat Greek yogurt (224g)
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Dash of cinnamon
  • ½ scoop vanilla protein powder (optional)
  • 1¼ cup chocolate chips (220g)
  • 1 tbsp coconut oil

Instructions

  1. Prep the Ingredients: Start by washing your strawberries—or whatever berries you’re using—under cold water. Pat them dry and chop them up into bite-sized pieces.
  2. Mix the Yogurt Base: In a mixing bowl, combine the plain Greek yogurt, honey or maple syrup, vanilla extract, and a dash of cinnamon. Give it a good stir until everything is well blended. If you’re adding protein powder, toss it in at this stage!
  3. Fold in the Berries: Gently fold in your freshly chopped strawberries/raspberries into the yogurt mixture. Make sure the berries are evenly distributed.
  4. Chill the Mixture: Pop the yogurt and berry mixture into the refrigerator for about 15-20 minutes.
  5. Melt the Chocolate: In a microwave-safe bowl, add your chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until melted and smooth.
  6. Assemble the Clusters: Drop spoonfuls of the yogurt and berry mix onto a parchment-lined baking sheet.
  7. Drizzle with Chocolate: Drizzle the melted chocolate over the yogurt clusters.
  8. Freeze the Clusters: Place the baking sheet in the freezer and let the clusters freeze for at least 1-2 hours.
  9. Enjoy: Once frozen, store your clusters in an airtight container in the freezer.

Notes

Feel free to substitute berries or add nuts for a different flavor. These clusters can last up to a month in the freezer!
