Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Prepare the crust: Combine graham cracker crumbs with the melted butter until evenly coated.
  2. Form the crust: Press the mixture into a 9-inch pie dish and chill.
  3. Make the filling: Beat cream cheese until smooth, then add powdered sugar and vanilla.
  4. Fluff it up: Whip heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
  5. Layer in the berries: Purée some of the berries and mix with half the filling for a swirl effect.
  6. Fill the crust: Layer the white filling and berry mixture, then swirl gently.
  7. Finish strong: Top with remaining white filling and chill for at least 4 hours.

Notes

This pie can be made ahead of time and tastes better the next day. Feel free to experiment with different berries or add flavors like lemon zest.
