- 2 strips lime zest, sliced
- 2 tablespoons lime juice
- 1 teaspoon sugar
- Kosher salt and freshly ground black pepper
- 1/2 small watermelon, rind discarded and sliced
- 1/3 cup torn fresh mint
- Flaky sea salt
Instructions
- Prep the Watermelon: Slice the watermelon in half and discard the rind. Cut the flesh into cubes or wedges.
- Mix the Dressing: In a small bowl, whisk together the olive oil, lime zest, lime juice, and sugar.
- Season the Watermelon: In a large bowl, toss the watermelon pieces with Kosher salt and freshly cracked black pepper.
- Add the Mint: Toss the fresh mint into the bowl with the watermelon and mix gently.
- Dress It Up: Drizzle the dressing over the watermelon and mint mixture, then toss gently until evenly coated.
