Description

A delightful twist on the classic Caesar salad, featuring tender tortellini and fresh romaine, all tossed in a creamy Caesar dressing.


Ingredients

  • 12 oz tortellini (fresh or frozen)
  • 4 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1 tsp anchovy paste (optional)
  • 1/2 cup Parmesan cheese, grated
  • 1 cup croutons
  • Black pepper, to taste

Instructions

  1. Cook the tortellini by boiling in salted water according to package instructions until al dente, then drain and rinse.
  2. Prep the romaine by washing and chopping into bite-sized pieces.
  3. Make the dressing by whisking together the Caesar dressing and anchovy paste until smooth.
  4. Combine the cooled tortellini with the dressing in a large bowl and toss to coat.
  5. Add the chopped romaine and a sprinkle of black pepper, and toss gently.
  6. Cheese it up by grating Parmesan over the top and giving it a light toss.
  7. Top with croutons just before serving.
  8. Plate and enjoy your Tortellini Caesar Pasta Salad chilled or at room temperature.

Notes

This pasta salad can be made ahead of time; just add the croutons right before serving to keep them crunchy.
