A delightful twist on the classic Caesar salad, featuring tender tortellini and fresh romaine, all tossed in a creamy Caesar dressing.

- 12 oz tortellini (fresh or frozen)
- 4 cups romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 1 tsp anchovy paste (optional)
- 1/2 cup Parmesan cheese, grated
- 1 cup croutons
- Black pepper, to taste
Instructions
- Cook the tortellini by boiling in salted water according to package instructions until al dente, then drain and rinse.
- Prep the romaine by washing and chopping into bite-sized pieces.
- Make the dressing by whisking together the Caesar dressing and anchovy paste until smooth.
- Combine the cooled tortellini with the dressing in a large bowl and toss to coat.
- Add the chopped romaine and a sprinkle of black pepper, and toss gently.
- Cheese it up by grating Parmesan over the top and giving it a light toss.
- Top with croutons just before serving.
- Plate and enjoy your Tortellini Caesar Pasta Salad chilled or at room temperature.
Notes
This pasta salad can be made ahead of time; just add the croutons right before serving to keep them crunchy.
