Ingredients

  • 2 cups pumpkin puree (fresh roasted or canned)
  • 1 onion, finely chopped

  • 1 tablespoon extra virgin olive oil
  • Fresh sage leaves
  • Salt, to taste
  • Black pepper, to taste
  • Broth or cream, for sauce consistency
  • Seasonal vegetables (broccoli, kale, or Brussels sprouts)
  • Fresh parsley, thyme, or rosemary
  • Parmesan cheese, for serving

Instructions

  1. Prepare the dough (or use store-bought): If making homemade pasta, combine flour, eggs, and salt, knead until smooth, wrap in plastic, and let rest for 30 minutes. For store-bought, use wonton wrappers or fresh pasta sheets.
  2. Sauté the onion and garlic: Heat olive oil in a pan, add onion, and sauté until translucent (5 minutes). Add minced garlic, cooking for another minute.
  3. Add the pumpkin: Stir in pumpkin puree, season with salt, pepper, and sage, and cook for 5 minutes.
  4. Fill your ravioli: Roll out pasta to 1/16 inch thick, cut circles, place pumpkin mixture in the center, fold, and seal tightly.
  5. Boil the ravioli: Cook in salted boiling water until they float (3-4 minutes), then transfer to a plate.
  6. Make the sage sauce: In the same pan, add olive oil and sage leaves, sauté until crispy, then add broth or cream.
  7. Combine ravioli and sauce: Gently toss the ravioli in the sauce, adding more broth or cream if needed.
  8. Serve up the deliciousness: Plate ravioli with crispy sage and drizzle of olive oil, sprinkle with parmesan cheese.
