Instructions
- Preheat the oven: Start by preheating your oven to 350°F (175°C).
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, and salt.
- Cream butter and sugars: In a large bowl, beat the softened butter, granulated sugar, and light brown sugar until light and fluffy.
- Add the pumpkin and egg: Mix in the pumpkin puree, egg, and vanilla extract until combined.
- Combine wet and dry: Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined.
- Scoop the dough: Use a cookie scoop to drop tablespoon-sized mounds of dough onto a parchment-lined baking sheet.
- Bake: Bake for approximately 10-12 minutes until set but still soft.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
