Description

Delicious pumpkin cookies topped with velvety cream cheese frosting, perfect for fall.


Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 3/4 cup (170 g) unsalted butter (room temperature)
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (100 g) packed light brown sugar
  • 1 1/4 cups (305 g) canned pumpkin puree
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 8 ounces (226 g) block-style cream cheese (softened but still cool)
  • 1/4 cup (56 g) unsalted butter (softened but still cool)
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 3/4 cups (210 g) confectioners’ sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt in a medium bowl.
  3. Cream the room-temperature butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the pumpkin puree, egg, and vanilla extract until combined.
  5. Gradually add the dry ingredient mixture to the wet, mixing on low speed until just combined.
  6. Scoop spoonfuls of the dough onto prepared baking sheets, leaving space between cookies.
  7. Bake for 12-15 minutes, letting cool on the baking sheet before transferring to a wire rack.
  8. Whip together the cream cheese and butter until light and fluffy; beat in vanilla extract and sifted confectioners’ sugar until smooth.
  9. Spread frosting on cooled cookies and enjoy!

Notes

Chill the dough for 30 minutes if cookies are spreading too much. Store in an airtight container for 2-3 days.
