- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the noodles: Begin by cooking the Lo Mein noodles according to package instructions. Once they’re al dente, rinse them under cold water to stop the cooking process and set aside.
- Prepare the pork: In a large skillet or wok, heat the peanut oil over medium-high heat. Once the oil is hot, add the ground pork. Use a spatula to break it up as it cooks. Cook for about 5-7 minutes until browned and no longer pink.
- Flavor it up: Stir in the minced garlic, grated ginger, and sriracha. Cook for about 1 minute until fragrant.
- Build the sauce: Pour in the chicken broth, mirin, and dark soy sauce. Bring it to a gentle simmer until it thickens.
- Toss in the veggies: Add the coleslaw mix and the sliced green onions to the pan. Toss together until the mix is wilted but still crunchy.
- Join the noodles: Add the rinsed noodles and gently fold them into the mixture until evenly coated and heated through.
- Plate and enjoy: Serve the dish warm in bowls. Garnish as desired.
Notes
For a fabulous touch, garnish with extra sliced green onions, sesame oil, or crispy wonton strips.
