Easy Creamy Lasagna Soup

Description

A comforting bowl of creamy lasagna soup, packed with flavor and nostalgia, perfect for cozy family dinners.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion (finely diced)
  • 1 pound ground beef (80/20)
  • 5 cloves garlic (minced)
  • ½ teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth
  • 2 teaspoons kosher salt (divided, or more to taste)
  • 12 lasagna noodles (uncooked and broken into 2” pieces)
  • ½ cup heavy cream (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup parmesan cheese (freshly grated)
  • ½ cup ricotta cheese
  • 6 tablespoons fresh basil (finely chopped)

Instructions

  1. Heat up the olive oil in a large pot over medium heat.
  2. Sauté the onion until translucent, about 5 minutes.
  3. Brown the ground beef, cooking until browned and no longer pink, about 7-8 minutes.
  4. Stir in the minced garlic and red pepper flakes, cooking for an additional minute.
  5. Sprinkle in the oregano and stir in the tomato paste, allowing it to cook for another 2 minutes.
  6. Pour in the tomato basil pasta sauce and canned tomatoes, followed by the chicken broth; stir and bring to a gentle simmer.
  7. Add 1 teaspoon of kosher salt; taste and adjust to your liking.
  8. Toss in the broken lasagna noodles and let it simmer for about 10-12 minutes.
  9. Stir in the heavy cream if desired, and then add the mozzarella, parmesan, and ricotta cheese off the heat.
  10. Mix in the chopped basil before serving.

Notes

For a vegetarian version, substitute ground beef with sautéed mushrooms and zucchini. Leftovers can be stored in an airtight container in the fridge for up to 4 days.
