- 1 pound ground beef
- 1 packet taco seasoning
- 6 corn tortillas, cut into strips
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 1 can refried beans
- 1 can diced tomatoes
- 1/2 cup chopped onions
- 1/2 cup sliced olives (optional)
- Sour cream (for topping)
- Lettuce (for topping)
- Salsa (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a large skillet over medium heat until no longer pink. Drain excess fat.
- Add taco seasoning and 1/2 cup of water; simmer for about 5 minutes.
- Prepare a 9×13-inch baking dish by layering half of the tortilla strips at the bottom.
- Spread refried beans evenly over the tortillas.
- Pour the seasoned ground beef mixture over the beans.
- Top with diced tomatoes, spreading them evenly.
- Sprinkle half of the shredded cheese over the tomatoes.
- Repeat with the remaining tortilla strips, beef mixture, and top with the rest of the cheese.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with sour cream, lettuce, and salsa before serving.
Notes
Let the casserole rest for a few minutes after baking before serving to allow flavors to meld.
