Description

A comforting and flavorful one-pan dish featuring sun-dried tomatoes and creamy sauce for a quick weeknight meal.


Ingredients

  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 2 cups chicken stock (or bone broth)
  • 1/2 cup half and half or whole milk (room temperature)
  • 1 (8 oz) jar sun-dried tomatoes in oil (oil drained)
  • 8 oz angel hair pasta
  • 1/3 cup parmesan cheese (grated)
  • 2 tablespoons optional – softened cream cheese (for extra creaminess)
  • 1 tsp Italian seasoning
  • 1/2 tsp freshly cracked pepper
  • 1/4 tsp salt
  • Optional – 1/2 tsp red pepper flakes

Instructions

  1. Sauté the aromatics: In a large skillet or pan over medium heat, melt the butter and sauté minced garlic for 1-2 minutes until fragrant.
  2. Pour in the chicken stock (or bone broth) and stir well to combine. Allow to simmer.
  3. Add the angel hair pasta to the simmering broth, cover, and cook for 6-7 minutes, stirring occasionally.
  4. Lower the heat and add the half and half (or milk) and cream cheese. Stir until well combined and creamy.
  5. Drain the sun-dried tomatoes and fold them into the pasta along with parmesan cheese, Italian seasoning, and optional red pepper flakes. Cook for another minute.
  6. Remove from heat, let sit for a minute, and serve garnished with fresh herbs if desired.

Notes

For a vegetarian version, substitute chicken stock with vegetable broth. You can also add proteins like grilled chicken or shrimp.
