A comforting and flavorful one-pan dish featuring sun-dried tomatoes and creamy sauce for a quick weeknight meal.

- 3 tablespoons butter
- 3 cloves garlic (minced)
- 2 cups chicken stock (or bone broth)
- 1/2 cup half and half or whole milk (room temperature)
- 1 (8 oz) jar sun-dried tomatoes in oil (oil drained)
- 8 oz angel hair pasta
- 1/3 cup parmesan cheese (grated)
- 2 tablespoons optional – softened cream cheese (for extra creaminess)
- 1 tsp Italian seasoning
- 1/2 tsp freshly cracked pepper
- 1/4 tsp salt
- Optional – 1/2 tsp red pepper flakes
Instructions
- Sauté the aromatics: In a large skillet or pan over medium heat, melt the butter and sauté minced garlic for 1-2 minutes until fragrant.
- Pour in the chicken stock (or bone broth) and stir well to combine. Allow to simmer.
- Add the angel hair pasta to the simmering broth, cover, and cook for 6-7 minutes, stirring occasionally.
- Lower the heat and add the half and half (or milk) and cream cheese. Stir until well combined and creamy.
- Drain the sun-dried tomatoes and fold them into the pasta along with parmesan cheese, Italian seasoning, and optional red pepper flakes. Cook for another minute.
- Remove from heat, let sit for a minute, and serve garnished with fresh herbs if desired.
Notes
For a vegetarian version, substitute chicken stock with vegetable broth. You can also add proteins like grilled chicken or shrimp.
