Ingredients

  • 2 cups baby potatoes (halved)
  • 4 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh rosemary (chopped, optional)
  • 1 tsp fresh thyme (chopped, optional)

Instructions

  1. Prep your ingredients by cutting the sirloin into bite-sized cubes and halving the baby potatoes.
  2. Boil the potatoes in salted water until fork-tender (about 10-12 minutes), then drain.
  3. Sear the steak bites in a skillet with olive oil over medium-high heat for about 3-4 minutes, seasoning with salt and pepper.
  4. Add garlic and butter to the skillet, stirring to infuse the garlic flavor for about 1-2 minutes.
  5. Combine the pre-boiled potatoes with the steak in the skillet and cook for another 2-3 minutes until golden and crispy.
  6. Sprinkle fresh herbs over the dish and toss to combine.
