- 2 boneless, skinless chicken breasts or thighs
- 1 sweet onion, diced
- 3 cloves fresh garlic, minced
- 2 tablespoons extra virgin olive oil
- 2 cups seasonal vegetables (spinach, broccoli, bell peppers)
- 1/4 cup fresh basil or parsley, chopped
- Salt and black pepper, to taste
- 2 cups chicken broth
- 1 cup heavy cream
- 12 oz pasta of choice, cooked
- 2 cups shredded cheese (mozzarella, parmesan, or a mix)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the chicken in a skillet over medium heat with olive oil for 5-7 minutes on each side until golden brown. Remove and shred.
- Sauté the onion and garlic in the same skillet until the onion is translucent, about 3-4 minutes.
- Add the seasonal vegetables and cook for another 3-5 minutes until tender.
- Make the Alfredo sauce by combining broth and cream in the skillet and simmering for about 5 minutes.
- Combine the pasta, shredded chicken, veggies, and sauce in a large bowl.
- Transfer the mixture to a greased baking dish, top with cheese, and smooth it out.
- Bake for 25-30 minutes until bubbly and golden on top.
- Let it rest for 5-10 minutes before serving.

Feel free to customize the vegetables and use different types of cheese for variety.
