Description

Ingredients

  • 1 lb Chicken (Breast or Thigh)
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 2 tbsp Olive Oil
  • 2 cups Seasonal Vegetables (bell peppers, zucchini, asparagus)
  • 1/4 cup Fresh Parsley (or Thyme)
  • Salt (to taste)
  • Black Pepper (to taste)
  • 3 cups Broth (Chicken or Vegetable)
  • 1 cup Orzo
  • Optional: splash of Cream

Instructions

  1. Prep your chicken by cutting it into bite-sized pieces, seasoning with salt and black pepper.
  2. Heat olive oil in a large skillet over medium heat, then add the seasoned chicken and cook until golden brown, about 5-7 minutes.
  3. Remove the chicken and set aside; sauté the chopped onion in the same skillet for about 3 minutes until soft.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Stir in the orzo and toast slightly for about a minute.
  6. Pour in the broth and bring to a simmer, cooking for 10 minutes.
  7. Incorporate the seasonal vegetables and let everything cook until the orzo is al dente.
  8. Return the chicken to the skillet, optionally stirring in cream, and heat everything through for 3-5 minutes.
  9. Finish with fresh herbs and adjust seasoning to taste.

Notes

Serve with garlic bread or a light salad for a complete meal. Experiment with different seasonal veggies or add pesto for a twist.
