- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream (for ganache)
Instructions
- Make the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly moistened.
- Press and chill: Transfer the crumb mixture into a 9-inch pie dish, pressing it firmly and chilling it while preparing the mousse.
- Prepare the mousse: In a large mixing bowl, add the peanut butter, powdered sugar, and vanilla extract. Beat with an electric mixer until smooth.
- Whip the heavy cream: In a separate bowl, whip the cream until stiff peaks form.
- Fold it together: Carefully fold the whipped cream into the peanut butter mixture.
- Add the chocolate: Melt the chocolate chips and fold them into the mousse mixture.
- Layer and chill: Pour the mousse filling into the crust and smooth the top. Chill for at least 4 hours.
- Make the ganache: Heat the heavy cream until it bubbles, pour it over chocolate chips, and stir until smooth.
- Top and serve: Pour the ganache over the mousse and chill for another hour.
Notes
For a dairy-free version, use coconut cream and dairy-free chocolate chips.
