- 2 medium sweet potatoes

Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the sweet potatoes: Peel and chop into chunks, boil for 15-20 minutes.
- Sauté the onions and garlic in olive oil until translucent.
- Add the protein to the skillet, cooking until browned.
- Incorporate the veggies and simmer for 5 minutes.

- Mash the sweet potatoes with olive oil until smooth.
