Ingredients

  • 1 lb Pork Tenderloin
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 2 cups Seasonal Vegetables (such as carrots, zucchini, or asparagus)
  • 1 tsp Fresh Thyme or Rosemary
  • Salt and Black Pepper, to taste
  • 1/2 cup Maple Syrup
  • 1/2 cup Broth or Heavy Cream (as needed)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels and season with salt and black pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat and sear the pork for 3-4 minutes on each side until golden brown.
  4. Remove the pork and add chopped onion to the skillet; sauté for 3-4 minutes until translucent. Add minced garlic and sauté for an additional minute.
  5. Pour in maple syrup, scraping up any brown bits from the skillet.
  6. Return the pork to the skillet, spooning the glaze over it and adding fresh herbs.
  7. Transfer the skillet to the oven and roast for about 20-25 minutes until the internal temperature reaches 145°F (63°C).
  8. Let pork rest for 5-10 minutes before slicing.
  9. Slice the pork into medallions and drizzle with remaining glaze. Serve with seasonal veggies.
