Description

Delicious grilled kabobs with juicy chicken, sweet pineapple, and colorful veggies, perfect for summer barbecues.


Ingredients

  • 4 large chicken breasts, cut into bite-sized chunks
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1 cup teriyaki sauce (store-bought or homemade)
  • 1/4 cup pineapple juice
  • 1 pineapple, peeled, cored, and cut into bite-sized chunks
  • 2 bell peppers (red, orange, or yellow), cut into bite-sized chunks
  • 1 bunch of scallions, green parts only, cut into 1-inch pieces
  • Sesame seeds, for garnish
  • Chopped fresh parsley or cilantro, for garnish

Instructions

  1. Marinate the chicken: In a bowl, combine the chicken chunks, kosher salt, cracked black pepper, teriyaki sauce, and pineapple juice. Toss until the chicken is well coated.
  2. Preheat the grill: Preheat your grill to around 400°F.
  3. Assemble the kabobs: Grab your skewers and alternate threading the marinated chicken, pineapple chunks, bell pepper pieces, and scallion sections.
  4. Grill the kabobs: Place your assembled kabobs on the preheated grill. Grill for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  5. Garnish and serve: Remove kabobs from the grill, sprinkle with sesame seeds and chopped herbs, and serve immediately.

Notes

Best enjoyed warm! These kabobs can be served with rice, salad, or a veggie-packed grain bowl.
