- 2–3 tablespoons high-quality extra virgin olive oil
- 1 finely diced yellow or white onion
- 1–2 cloves minced garlic
- 2 fresh lemons (juice and zest)
- 2 cups vegetable broth or chicken broth
- 1 teaspoon sea salt
- Freshly cracked black pepper to taste
- Fresh dill or parsley for garnish
Instructions
- Rinse the rice under cold water in a fine-mesh strainer.
- Sauté the olive oil in a medium saucepan over medium heat, add the diced onions, and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Nix the rinsed rice to the saucepan, stirring to coat it in the oil.
- Incorporate the vegetable or chicken broth along with the lemon juice and zest.
- Season with sea salt and black pepper to taste.
- Simmer by bringing to a gentle simmer, then cover and reduce the heat to low. Cook undisturbed for 18-20 minutes.
- Fluff the rice with a fork, stirring in your fresh herbs before serving.
