  • 1 finely diced yellow or white onion
  • 12 cloves minced garlic
  • 2 fresh lemons (juice and zest)
  • 2 cups vegetable broth or chicken broth
  • 1 teaspoon sea salt
  • Freshly cracked black pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  1. Rinse the rice under cold water in a fine-mesh strainer.
  2. Sauté the olive oil in a medium saucepan over medium heat, add the diced onions, and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Nix the rinsed rice to the saucepan, stirring to coat it in the oil.
  5. Incorporate the vegetable or chicken broth along with the lemon juice and zest.
  6. Season with sea salt and black pepper to taste.
  7. Simmer by bringing to a gentle simmer, then cover and reduce the heat to low. Cook undisturbed for 18-20 minutes.
  8. Fluff the rice with a fork, stirring in your fresh herbs before serving.
