- 1 Yellow Onion, chopped
- 3–4 cloves Garlic, minced
- 2 tbsp Olive Oil
- 1 cup Pure Canned Pumpkin (not pumpkin pie filling)
- 1 tsp Ground Cumin
- 1 tbsp Chili Powder
- 1 tsp Dried Oregano
- Salt and Black Pepper, to taste
- 2 cups Chicken or Vegetable Broth
- Optional: Additional seasonal vegetables like zucchini or sweet potatoes
Instructions
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Toss in chopped onion and garlic. Sauté until fragrant and translucent.
- Brown the Turkey: Push the veggies to the side and add ground turkey. Break it up as it browns.
- Spice It Up: Once turkey is cooked, sprinkle in cumin, chili powder, oregano, salt, and pepper. Stir and let spices bloom.
- Mix in the Pumpkin: Stir in pumpkin puree and broth. Adjust the amount of broth based on desired thickness.
- Simmer: Bring to a simmer, cover, and cook for 20-30 minutes, stirring occasionally.
- Taste and Adjust: Check seasoning and add more chili powder or cream if desired.
- Serve: Dish up warm with your favorite toppings.
