Elegant mini beef Wellington bites that combine tender beef, savory mushrooms, and buttery puff pastry—perfect for any gathering.


Ingredients

  • 1 pound Beef Tenderloin, cut into small, bite-sized pieces
  • 1 sheet Puff Pastry, store-bought, thawed
  • 8 ounces Mushrooms, button or cremini, finely chopped
  • 2 Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh Thyme
  • 3 tablespoons Butter, for sautéing
  • 2 tablespoons Dijon Mustard
  • 1 Egg, beaten, for egg wash
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Sauté the mushrooms, shallots, and garlic in 2 tablespoons of melted butter for 5-7 minutes until soft. Add thyme, salt, and pepper; let cool.
  3. Prepare the beef by searing in a skillet with butter for 1-2 minutes until browned. Brush with Dijon mustard.
  4. Roll out the puff pastry to 1/4 inch thick, and cut into 3-inch squares.
  5. Assemble each square with mushroom mixture and beef, seal tightly.
  6. Brush with the beaten egg and place on a parchment-lined baking sheet.
  7. Bake for 15-18 minutes, until golden brown.
  8. Serve warm, optionally with a side of horseradish cream or herby yogurt dip.

Notes

Make ahead by assembling and refrigerating until ready to bake, adding extra time if baking from cold.
