- 1 pound Beef Tenderloin, cut into small, bite-sized pieces
- 1 sheet Puff Pastry, store-bought, thawed
- 8 ounces Mushrooms, button or cremini, finely chopped
- 2 Shallots, finely chopped
- 2 cloves Garlic, minced
- 1 teaspoon Fresh Thyme
- 3 tablespoons Butter, for sautéing
- 2 tablespoons Dijon Mustard
- 1 Egg, beaten, for egg wash
- Salt, to taste
- Black Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Sauté the mushrooms, shallots, and garlic in 2 tablespoons of melted butter for 5-7 minutes until soft. Add thyme, salt, and pepper; let cool.
- Prepare the beef by searing in a skillet with butter for 1-2 minutes until browned. Brush with Dijon mustard.
- Roll out the puff pastry to 1/4 inch thick, and cut into 3-inch squares.
- Assemble each square with mushroom mixture and beef, seal tightly.
- Brush with the beaten egg and place on a parchment-lined baking sheet.
- Bake for 15-18 minutes, until golden brown.
- Serve warm, optionally with a side of horseradish cream or herby yogurt dip.
Notes
Make ahead by assembling and refrigerating until ready to bake, adding extra time if baking from cold.
