- 2 lbs Boneless, Skinless Chicken Breasts
- Salt, to taste
- Pepper, to taste
- 1 cup Flour (for coating)
- 2 large Eggs (beaten)
- 1 cup Breadcrumbs (seasoned preferred)
- 1 tsp Garlic Powder
- 1 tsp Paprika
- Vegetable Oil (for frying)
- 1 tbsp Olive Oil (for frying tortillas)
- 4 large Flour Tortillas
- 4 slices Cooked Bacon (crispy)
- 1 cup Shredded Lettuce
- 1 large Tomato (sliced)
- 1/2 cup Mayonnaise (for sauce)
- 1 tbsp Dijon Mustard (for sauce)
- 1 cup Shredded Cheese (Cheddar recommended)
Instructions
- Prep the Chicken: Start by patting dry your chicken breasts with paper towels and season with salt and pepper.
- Coating Station: Set up a dredging station with three shallow bowls: one with flour, one for the beaten eggs, and one for breadcrumbs mixed with garlic powder and paprika.
- Dredge the Chicken: Coat each seasoned chicken breast in flour, dip it in the eggs, and then coat it in breadcrumbs.
- Heat the Oil: In a large skillet, add enough vegetable oil to cover the bottom of the pan and heat over medium-high until shimmering.
- Fry the Chicken: Carefully place the breaded chicken in the hot oil, frying for about 5-7 minutes on each side until golden brown.
- Crisp the Tortillas: Wipe down the pan, add olive oil, and fry the tortillas for about 30 seconds on each side.
- Assemble the Wraps: Spread mayo and Dijon on the tortillas, and layer with lettuce, tomatoes, bacon, and fried chicken pieces.
- Wrap it Up: Fold in the sides of the tortilla and roll it up tightly.
- Slice and Serve: Cut the wraps in half diagonally and serve.
