- 4 Salmon Fillets
- 1 cup Heavy Cream
- ½ cup Grated Parmesan Cheese
- 3 cloves Garlic, minced
- 1 cup Cherry Tomatoes, halved
- 2 cups Fresh Spinach
- ¼ cup Fresh Basil, chopped
- 2 tablespoons Butter
- Salt to taste
- Black Pepper to taste
Instructions
- Preheat the pan: Start by firing up your stovetop! Heat a large skillet over medium-high heat.
- Season the salmon: While the pan heats, season both sides of the salmon fillets with salt and pepper.
- Sear the salmon: Add a tablespoon of butter, then place the salmon fillets skin-side down and let them sear for about 4-5 minutes.
- Flip and cook: Flip the fillets gently and cook for another 3-4 minutes until cooked through and flakes easily. Remove from skillet.
- Sauté garlic and tomatoes: In the same skillet, lower the heat and add another tablespoon of butter. Add garlic and sauté for about 30 seconds, then add tomatoes and let them blister for 2-3 minutes.
- Create the creamy sauce: Pour in heavy cream, stir to combine, and let it simmer for about 2 minutes. Stir in grated parmesan until melted and smooth.
- Add spinach and basil: Stir in fresh spinach until wilted, then add fresh basil and mix.
- Bring back the salmon: Gently place cooked salmon back in the skillet, spooning the sauce over. Simmer for an additional minute to warm through.
- Taste and adjust: Taste the sauce and adjust seasoning with salt and pepper before serving.
Notes
Serve over rice or mashed potatoes, and garnish with olive oil and fresh basil.
