Description

A flavorful Italian dish featuring salmon in a rich, creamy sauce with garlic, spinach, and cherry tomatoes.


Ingredients

  • 4 Salmon Fillets
  • 1 cup Heavy Cream
  • ½ cup Grated Parmesan Cheese
  • 3 cloves Garlic, minced
  • 1 cup Cherry Tomatoes, halved
  • 2 cups Fresh Spinach
  • ¼ cup Fresh Basil, chopped
  • 2 tablespoons Butter
  • Salt to taste
  • Black Pepper to taste

Instructions

  1. Preheat the pan: Start by firing up your stovetop! Heat a large skillet over medium-high heat.
  2. Season the salmon: While the pan heats, season both sides of the salmon fillets with salt and pepper.
  3. Sear the salmon: Add a tablespoon of butter, then place the salmon fillets skin-side down and let them sear for about 4-5 minutes.
  4. Flip and cook: Flip the fillets gently and cook for another 3-4 minutes until cooked through and flakes easily. Remove from skillet.
  5. Sauté garlic and tomatoes: In the same skillet, lower the heat and add another tablespoon of butter. Add garlic and sauté for about 30 seconds, then add tomatoes and let them blister for 2-3 minutes.
  6. Create the creamy sauce: Pour in heavy cream, stir to combine, and let it simmer for about 2 minutes. Stir in grated parmesan until melted and smooth.
  7. Add spinach and basil: Stir in fresh spinach until wilted, then add fresh basil and mix.
  8. Bring back the salmon: Gently place cooked salmon back in the skillet, spooning the sauce over. Simmer for an additional minute to warm through.
  9. Taste and adjust: Taste the sauce and adjust seasoning with salt and pepper before serving.

Notes

Serve over rice or mashed potatoes, and garnish with olive oil and fresh basil.
