- 1 pound boneless, skinless chicken breast
- 3 tablespoons butter
- 4 large garlic cloves, minced
- 1/2 yellow onion, finely minced
- 3–4 ounces roasted red peppers, thinly sliced
- 1/4 teaspoon paprika
- 1 1/2 cups heavy cream
- 1 cup packed fresh basil leaves plus more for garnish
- 1 cup fresh grated parmesan
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup white wine or chicken stock
- Salt, to taste
- Black pepper, to taste
Instructions
- Season the chicken breasts with salt and black pepper.
- Melt the butter in a large skillet over medium-high heat.
- Add the chicken breasts and cook for about 5-7 minutes on each side.
- Remove the chicken from the skillet and let it rest on a plate.
- Toss the minced garlic and onions into the skillet and sauté until fragrant.
- Add the roasted red peppers, paprika, and crushed red pepper flakes.
- Pour in the heavy cream and white wine, allowing it to simmer for about 5 minutes.
- Incorporate the grated Parmesan and fresh basil into the sauce.
- Nestle the chicken back into the sauce and simmer for another 2-3 minutes.
Notes
Serve over mashed potatoes, rice, or pasta. Garnish with fresh basil and additional Parmesan if desired.
