- 1 cup bell peppers, diced
- 1 cup carrots, shredded
- 1 cup water chestnuts, diced
- 1/4 cup green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1/4 cup peanut sauce
- Lettuce leaves (for wrapping)
Instructions
- Heat the oil: In a large skillet or wok, heat your vegetable oil over medium-high heat. Add the minced garlic and ginger and sauté for about 30 seconds until golden and aromatic.
- Brown the chicken: Add the ground chicken and cook for about 5-7 minutes, breaking it apart until no longer pink.
- Toss in the veggies: Add the diced bell peppers, shredded carrots, and diced water chestnuts and cook for an additional 3-4 minutes.
- Season it up: Drizzle in the soy sauce and rice vinegar, stirring together for another minute.
- Finish with green onions: Stir in the chopped green onions and adjust seasonings if necessary.
- Serve: Spoon your flavorful filling onto the lettuce leaves and drizzle with peanut sauce.
