- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1/4 cup peanut sauce
- Lettuce leaves (for wrapping)
Instructions
- Heat the oil: In a large skillet or wok, heat your vegetable oil over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until golden and aromatic.
- Brown the chicken: Add the ground chicken to the skillet, breaking it apart as it cooks for about 5-7 minutes until it’s no longer pink.
- Toss in the veggies: Once the chicken is cooked, toss in your diced bell peppers, shredded carrots, and diced water chestnuts. Cook for an additional 3-4 minutes.
- Season it up: Drizzle in the soy sauce and rice vinegar, stirring for another minute.
- Finish with green onions: Stir in the chopped green onions and taste for seasoning adjustments.
- Serve: Spoon the filling onto the lettuce leaves and drizzle with peanut sauce.
