A hearty and flavorful twist on the classic Caesar salad, combined with pasta for a delicious meal perfect for any occasion.


Ingredients

  • 2 cups cooked pasta (rotini or penne recommended)
  • 1 cup cooked chicken, diced
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing
  • Salt and pepper to taste

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil, adding pasta, and cooking until al dente, about 8-10 minutes.
  2. Cool the pasta by draining and rinsing it with cold water.
  3. Prep the chicken by dicing it into bite-sized pieces.
  4. Chop the romaine lettuce and halve the cherry tomatoes, then add to the bowl with the pasta.
  5. Mix in the grated Parmesan cheese and Caesar dressing until well-coated.
  6. Season with salt and pepper to taste.
  7. Chill the salad in the fridge for about 30 minutes before serving.

Notes

Feel free to add grilled veggies or swap the dressing for a lighter option. This salad can be made ahead of time, but add the dressing just before serving.
