Ingredients

- 2 cups cooked pasta (rotini or penne recommended)
- 1 cup cooked chicken, diced
- 1 cup romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 1/2 cup Caesar dressing
- Salt and pepper to taste
Instructions
- Cook the pasta by bringing a large pot of salted water to a boil, adding pasta, and cooking until al dente, about 8-10 minutes.
- Cool the pasta by draining and rinsing it with cold water.
- Prep the chicken by dicing it into bite-sized pieces.
- Chop the romaine lettuce and halve the cherry tomatoes, then add to the bowl with the pasta.
- Mix in the grated Parmesan cheese and Caesar dressing until well-coated.
- Season with salt and pepper to taste.
- Chill the salad in the fridge for about 30 minutes before serving.
Notes
Feel free to add grilled veggies or swap the dressing for a lighter option. This salad can be made ahead of time, but add the dressing just before serving.
