Deliciously moist pumpkin cookies infused with chocolate chips, perfect for fall gatherings.


Ingredients

  • 1 cup canned pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the canned pumpkin puree, brown sugar, granulated sugar, vegetable oil, and eggs in a mixing bowl until smooth.
  3. Combine the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet ingredients and stir gently until just combined.
  5. Fold in the chocolate chips.
  6. Scoop the dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes or until the edges are set but the centers remain soft.
  8. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For a lighter taste, substitute half the oil with unsweetened applesauce. You can also add nuts or spices for variations.
