- 2 cups cooked white rice
- 2 boneless, skinless chicken breasts, diced
- 1/2 cup buffalo sauce
- 1 tablespoon olive oil
- 1 cup shredded lettuce
- 1/2 cup diced celery
- 1/2 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions, preferably in chicken broth for extra flavor.
- Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt and pepper, and sauté for about 5-7 minutes until cooked and golden brown.
- Add buffalo sauce to the cooked chicken, reducing heat to low, and stir to coat. Allow to simmer for 2-3 minutes.
- Assemble your bowls by scooping rice as the base, topping it with the buffalo chicken mixture.
- Layer on the fresh toppings: shredded lettuce, diced celery, and shredded cheddar cheese.
- Drizzle ranch dressing over the top and finish with sliced green onions.
