- 1 can of black beans
- 1 ripe avocado, sliced
- Salt and pepper to taste
- Oil for cooking
Instructions
- Prep your ingredients: Start by draining and rinsing the black beans. Slice your avocado and have your tortillas ready.
- Heat your pan: Drizzle a small amount of oil in a non-stick skillet over medium heat.
- Assemble your quesadilla: Lay a tortilla flat in the skillet and sprinkle cheese on one half. Add black beans, avocado slices, and seasoning.
- Fold and cook: Carefully fold the tortilla and cook for 3–4 minutes until golden brown.
- Flip and repeat: Flip the quesadilla and cook for another 3–4 minutes until crispy.
- Slice and serve: Transfer to a cutting board, cool slightly, and slice into wedges.
