Description

Take classic comfort food to party size with these Mini Grilled Cheese bites! Buttery, melty, and packed with flavor from sharp cheese spread, salsa, green chiles, and cheddar, they’re ideal for entertaining, snacking, or a fun twist on a lunchbox staple.


Ingredients

2 cups butter, softened

4 jars (5 oz each) sharp American cheese spread, softened

2 large eggs

2 cans (4 oz each) chopped green chiles, drained

1/2 cup salsa

4 cups shredded cheddar cheese

4 loaves (1½ lbs each) thinly sliced sandwich bread, crusts removed


Instructions

In a large bowl, beat together cheese spread, eggs, green chiles, salsa, and shredded cheddar until well combined.

Spread softened butter on one side of each bread slice.

On the unbuttered side, spread a spoonful of cheese mixture and top with another slice to form a sandwich (buttered sides out).

Cut each sandwich into quarters for minis.

Grill in a skillet or on a griddle over medium heat until golden and melty, about 2–3 minutes per side.

Serve warm and gooey!
