A vibrant and crunchy Thai Chicken Salad with shredded chicken, fresh veggies, and a creamy peanut dressing.


Ingredients

  • 2 cups cooked shredded chicken
  • 4 cups shredded cabbage
  • 1 cup chopped carrots
  • 1/2 cup chopped green onions
  • 1/2 cup crushed peanuts
  • 1/4 cup cilantro
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)

Instructions

  1. Start by shredding your cooked chicken if it’s not already done. Shred your cabbage and carrots.
  2. In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and sesame oil until smooth.
  3. In a big salad bowl, toss together the shredded chicken, cabbage, carrots, green onions, and cilantro.
  4. Pour the dressing over the top, and toss until every piece is coated.
  5. Once everything is well combined, sprinkle the crushed peanuts on top.
  6. Now is the time to taste your creation!
  7. You can serve this salad right away or chill it in the fridge for 20-30 minutes.

Notes

This salad is best enjoyed fresh but can be stored in an airtight container in the fridge for up to 2 days. Keep the dressing separate until serving.
