Ingredients
Scale
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup butter (softened)
- 1/4 cup sugar
- 1 cup dark brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 2 large apples (chopped finely)
- 2 Tbsp brown sugar (for topping)
- 1 Tbsp butter (for topping)
- 1/4 cup pure maple syrup
- 1/2 cup powdered sugar
- 1/4 tsp vanilla extract (for glaze)
- 1/8 tsp ground cinnamon (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang.
- Mix the dry ingredients: whisk together the flour, baking powder, salt, and cinnamon in a large bowl.
- Cream the softened butter, sugar, and dark brown sugar until light and fluffy—about 2-3 minutes.
- Add the eggs one at a time, followed by the vanilla extract, mixing until just combined.
- Combine the wet and dry ingredients gradually, mixing until just combined.
- Fold in the finely chopped apples until evenly distributed.
- Pour the batter into the prepared baking dish, sprinkle with brown sugar, and drizzle with melted butter. Bake for 25-30 minutes until golden.
- Prepare the maple glaze by whisking together powdered sugar, maple syrup, vanilla extract, and ground cinnamon.
- Cool the blondies in the pan for 10 minutes, then lift out using parchment and drizzle with glaze.
Notes
