Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang.
  2. Mix the dry ingredients: whisk together the flour, baking powder, salt, and cinnamon in a large bowl.
  3. Cream the softened butter, sugar, and dark brown sugar until light and fluffy—about 2-3 minutes.
  4. Add the eggs one at a time, followed by the vanilla extract, mixing until just combined.
  5. Combine the wet and dry ingredients gradually, mixing until just combined.
  6. Fold in the finely chopped apples until evenly distributed.
  7. Pour the batter into the prepared baking dish, sprinkle with brown sugar, and drizzle with melted butter. Bake for 25-30 minutes until golden.
  8. Prepare the maple glaze by whisking together powdered sugar, maple syrup, vanilla extract, and ground cinnamon.
  9. Cool the blondies in the pan for 10 minutes, then lift out using parchment and drizzle with glaze.

For a gluten-free option, substitute all-purpose flour with a 1:1 gluten-free blend. Nutty variations can include chopped walnuts or pecans.
