Ingredients

  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar (for topping)
  • 1 Tbsp butter (for topping)
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract (for glaze)
  • 1/8 tsp ground cinnamon (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Mix the dry ingredients: whisk the flour, baking powder, salt, and cinnamon in a large bowl.
  3. Cream the butter, sugar, and dark brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, followed by the vanilla extract, and mix until just combined.
  5. Combine the wet and dry ingredients until just combined, avoiding overmixing.
  6. Fold in the finely chopped apples evenly.
  7. Pour the batter into the prepared dish, smooth the top, then sprinkle with brown sugar and drizzle with melted butter.
  8. Bake for 25-30 minutes, until golden and a toothpick comes out with a few moist crumbs.
  9. Prepare the maple glaze by whisking together the powdered sugar, maple syrup, vanilla extract, and ground cinnamon.
  10. Cool the blondies for about 10 minutes, then drizzle with the maple glaze.
