- 1 cup coconut milk
- 1 ripe mango, diced
- 1/2 cup dragon fruit, diced
- 1–2 tablespoons maple syrup or honey (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the Chia Mixture: In a medium-sized bowl, combine the chia seeds and coconut milk. Stir thoroughly to ensure there are no clumps of chia seeds. Let the mixture sit for about 5 minutes before stirring again.
- Sweeten it Up (If Desired): Based on your sweet tooth, add 1-2 tablespoons of maple syrup or honey to the chia mixture. Stir well to incorporate.
- Chill and Set: Once combined, cover the bowl and refrigerate for at least 120 minutes or, preferably, overnight.
- Dicing the Fresh Fruits: While you wait, prep your fruit! Dice the mango and dragon fruit into small pieces.
- Assemble the Pudding: Spoon the chia pudding into serving glasses or bowls and layer with diced mango and dragon fruit.
- Garnish with Fresh Mint: Sprinkle some fresh mint leaves on top for a fragrant finish.
