Description

A hearty Loaded Potato Taco Bowl featuring crispy roasted potatoes topped with seasoned ground meat, zesty beans, and all your favorite taco fixings.


Ingredients

  • 4 medium potatoes, diced
  • 1 lb ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss your diced potatoes with olive oil, salt, pepper, and half of the taco seasoning. Spread them out on a baking sheet.
  3. Roast for 25-30 minutes, stirring halfway through.
  4. Heat a skillet over medium heat, add olive oil, and ground beef (or turkey). Cook until browned, about 5-7 minutes.
  5. Add the remaining taco seasoning and a splash of water. Simmer until thickened.
  6. Stir in black beans and corn, cooking for another 2-3 minutes.
  7. Assemble the bowl with roasted potatoes, meat mixture, diced tomatoes, avocado, cheese, and cilantro.

Notes

Customize with your favorite toppings and enjoy! Serve with lime wedges for added zing.
