Description

A refreshing and zesty lemon pizza that brings a burst of sunshine to your dinner table.


Ingredients

  • 1 ball easy pizza dough (or store-bought dough)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 5 oz fresh mozzarella
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley for garnish
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 475°F (245°C).
  2. Prepare your dough: let it rest if homemade, or follow store-bought instructions.
  3. Stretch the dough on a floured surface to about 12 inches in diameter.
  4. Oil one side of the dough with olive oil on a baking sheet or pizza stone.
  5. Prep the garlic and herbs: mix garlic, parsley, lemon zest, lemon juice, salt, and pepper.
  6. Spread the garlic-herb mixture over the oiled side of the dough.
  7. Add torn mozzarella pieces on top.
  8. Sprinkle grated parmesan cheese over the entire pizza.
  9. Bake for about 10-12 minutes until the crust is golden and cheese is bubbly.
  10. Garnish with olive oil, lemon juice, chopped parsley, and black pepper before slicing.

Notes

For a twist, try adding olives or seasonal veggies. This pizza is forgiving and can be adapted to suit your taste!
