Description

A creamy and zesty breakfast that can be prepared in less than 10 minutes the night before, making busy mornings delicious and bright.


Ingredients

  • 1 cup rolled oats
  • 1 cup unsweetened almond milk (or any milk of choice)
  • 1/2 cup Greek yogurt
  • 1 scoop protein powder (vanilla or unflavored, optional)
  • 2 tablespoons chia seeds
  • 1/4 cup lemon juice
  • 1 tablespoon honey or maple syrup (optional)
  • Zest of 1 lemon
  • Fresh fruit for topping (optional)

Instructions

  1. Mix it all up – In a medium bowl or large mixing jar, combine the rolled oats, chia seeds, and protein powder. Stir these dry ingredients together to get them well mixed.
  2. Add the wet ingredients – Pour in the almond milk, Greek yogurt, lemon juice, and honey or maple syrup. Give it a good stir until everything is combined.
  3. Add the zest of one lemon to the mix. Stir well to incorporate.
  4. Transfer the mixture into individual jars or containers with lids. Seal tightly and let sit in the fridge overnight, or at least 4 hours.
  5. When ready to eat, remove from the fridge, add a splash of milk if needed, and top with your favorite fresh fruit.

Notes

Serve these overnight oats in clear jars to showcase the layers. Top with fresh berries and a sprinkle of lemon zest for added flavor.
